Recipe 72: Avocado Salad with Forest Fruit and Chickpeas

Even when I am extremely busy, I make sure I get enough exercise and nutrients to give me plenty of energy. I need it. Sleep is not alway my priority (I wish it was, because I should get about eight hours of it every night), but I always force myself to go to the gym at least three times a week, plus I make sure my body gets what it needs. I know that breakfast is the most important meal of the day, but I prefer to put a little bit more energy into lunch.
Today for lunch, I had an amazing salad that will keep me full until dinner. It is packed with fiber, healthy fats, protein, and complex carbohydrates. And guess what? It is super tasty!

  • Lettuce, shredded - 1 cup
  • Carrot - 1 small
  • Broccoli, raw - 1/2 cup chopped
  • Avocado - 1/2 piece
  • Chickpeas - 1/4 cup
  • Forest fruit - 1/4 cup
  • Agave nectar - 1 tsp
  • Extra virgin olive oil - 1 tsp
  • Dijon mustard - 1 tsp
  • Lemon juice - 1 tsp
  • Salt and pepper to taste
  1. Basically just chop up your veggies, and start building the salad! Add lettuce, carrot, broccoli, avocado, chickpeas, and forest fruit mix on a plate.
  2. Make the dressing by mixing the agave, olive oil, mustard, lemon juice, and salt and pepper. Drizzle on top of the salad.
This is also a perfect lunch to take with you to work or school.
