Recipe 70: Pumpkin Spiced Latte Waffles

Second pumpkin recipe! I get so excited over these things. Pumpkin soup has been highly requested by my followers, and I will share my favorite recipe for that with you soon, but I also feel the need to be super creative when it comes to designing recipes with pumpkin. I mean, it is fall after all, so we can use pumpkin in whichever food we prepare, and there is absolutely no need for an explanation!
This week my favorite pumpkinified recipe was the one I am sharing with you today: pumpkin waffles with pumpkin spiced latte ice cream. I kid you not. It is all super healthy, of course, but also soooooooo incredibly delicious. And there is absolutely no need for sugary or fattening ingredients, we can all keep our daily diets super clean and still enjoy some dishes from heaven. Let's dig in!
Ingredients
For the waffles
  • Banana - 1 small
  • Pumpkin puree - 3 tbsp (see recipe here)
  • Egg, or chia seed/flax egg - 1 medium (or 1 tbsp seed to 3 tbsp water)
  • Oats, rolled, gluten free - 1/2 cup
  • Baking powder, gluten free - 1/2 tsp
  • Pumpkin spices (gingerbread spices also work) - 1 tsp
  • Oil, coconut or another neutral oil - 1/2 tsp'
For the ice cream
  • Banana - 2 small
  • Instant coffee - 1/4 tsp
  • Pumpkin spices - 1/2 tsp
  • Vanilla, seeds or extract - 1/4 tsp
Instructions
  1. Peel the banana, slice it up, and freeze in a ziplog bag overnight, or for at least 2-3 hours.
  2. Preheat your waffle iron.
  3. While your iron is preheating, put all of the ingredients for the waffles, except for the oil, in a food processor: the banana, pumpkin puree, egg, oats, baking pwder, and pumpkin spices. Blend until smooth.
  4. With a pastry brush, grease the inside of the waffle iron. Then use an ice cream scoop or spoon to ladle the batter equally into the waffle iron. This recipe makes 4 waffles.
  5. Clean the food processor, and blend the frozen banana slices, instant coffee, pumpkin spices, and vanilla until smooth and ice cream consistency. You might have to pulse a few times for about 20 seconds per pulse.
  6. Serve ice cream on top of the waffles. Your waffles will not be warm if you use this recipe, but trust me: it is totally worth it. It is like eating cake-flavored ice cream.
This is such a good breakfast or brunch to start your day with. I have no words. I was in breakfast heaven when I had this for breakfast this morning.
