Recipe 50: Crispy French Fries from the Oven

Recipe number 50! I cannot believe it! I just want to introduce this quickly: let's celebrate with some home made french fries from the oven!

  • Potatoes, floury – 4 medium sized pieces
  • Spices, to your choice (I used a masala spice mix)
  • Olive oil
  • Salt

  1. Cut the potatoes into the correct shape. If you want the potatoes to entirely look like french fries, you need to make sure all sides hace the exact equal width. Mine were roughly the same, but not all of them. You can make them as thick or as thin as you like.
  2. Put the fries into cold water for at least 20 minutes. This takes off some of the starch, which means the potatoes will become nice and crispy later on.
  3. Preheat your oven to 400 degrees F, or 200 degrees C.
  4. After 20 minutes in the water, take the fries out and dry them with a kitchen towel and/or paper towel. No water should be dripping off, but they do not have to be super dry.
  5. Sprinkle the spices (except for the salt!) over. I used masala spices, which is an Indian spice mix. I think they would also taste very nice with some Italian herbs, French herbs, or maybe even just a little bit of ground black pepper. The reason you should not use salt at this stage is because salt will keep the potatoes moist, while they should become nice and crispy in the oven.
  6. Now add olive oil to the sliced potatoes. I think I used about two to three tablespoons of garlic flavored olive oil. Get your hands dirty, and mix it all throughout the batch. Make sure all fries are covered in oil.
  7. Bake the fries for 40 to 50 minutes, and make sure you stir them through every 10 minutes, so every piece gets crispy.

Ready to serve! This is a perfect comfort food, and much healthier than the regular version. Enjoy!
