Recipe 49: Gluten-Free Banana Pancakes

I am a major fan of pancakes, but my traditional recipe for good ol' American pancakes is really unhealthy, so not something to eat on a daily basis. Therefore, I went on a quest for the easiest, healthiest pancake recipe that still makes them delicious and fluffy. The most popular one on the internet seems to be Blogilates's banana pancakes, which consists of just one ripe banana, and two eggs. I tried it, but I must admit I found them pretty boring and nothing like actual pancakes. They were healthy though, so I decided to base my own recipe on these ones. The solution was pretty easy: it needed an ingredient that would make them more cake-like. The perfect, healthy solution? Oats! Here is my recipe for healthy, gluten-free pancakes with only three ingredients.
Ingredients
Banana – 1 piece
Eggs, medium – 2 pieces
Oats, gluten-free – ½ cup
Oil, neutral – 1 tsp

Instructions
  1. In a blender, mix all the ingredients until you have a smooth batter. The oats should be totally broken up into a sort of meal.
  2. Heat up a frying pan to medium heat, and grease lightly with some oil.
  3. When the oil is hot, take an ice cream scoop or a ladle, and bake the pancakes. Turn them after about 2 or 3 minutes when the top has some bubbles but is not dry, and bake for another half a minute to 1 minute.

Serve with some maple syrup, honey, sugar, or whatever you like topping them with. I used some agave and coconut cream.

    1. The brand is Provena, I bought them at some shop in Amsterdam, but I'm sure you can buy them online!
