Recipe 44: Goats Cheese Eggwhite Omelette

Good morning, lovely people of the earth! I woke up this morning, being super excited about breakfast. I made custard a couple of days ago, so I still had some egg whites in the fridge. Do you know what that means? Egg white omelette for breakfast! Egg white omelettes are great for protein, they are not packed with calories, and with the right seasoning they taste amazing! I combined it with some goats cheese today, and I added a few slices of melon on the side. This is the perfect start of the day if you are vegetarian or/and gluten free.

Please do not mind the quality of the pictures. I am at my parents', so I did not have my Canon at hand.

What do you need?
  • Olive oil - 1 tsp
  • Egg whites - 3 pieces
  • Goats cheese, firm (so not the soft kind) - 3 tbsp graded or 3 slices
  • Pepper
  • Goats cheese, soft - 1 tbsp (optional)
  • Fruit, for on the side
Of course the fruit on the side is totally optional. You could also use this omelette in a sandwich for breakfast or lunch, or you could eat it for dinner with some steamed veggies. The sky is the limit!

How to make it?
  1. Heat up a small frying pan on medium heat, and add a bit of olive oil. Of course you could use coconut oil or any neutral oil that you prefer. 
  2. Grade the firm goats cheese, and mix in with the egg whites. Add some pepper, and whisk until combined.
  3. Bake omelette on one side until you can lift it with a spatula without it falling apart. This will take approximately 4 minutes. Bake the other side for about a minute.
  4. Fold the omelette, and top with some soft goats cheese. 
And there you have it! It is really this simple, and it is done in a little over five minutes.
