Recipe 43: Oatmeal Cookies with Blue Cheese and Raspberry Jam

If there is anything I have baked a lot in my life, it must be these oatmeal cookies. I probably made them even more often than cupcakes, and trust me; I have made a lot of cupcakes in my life. I used to make these for my father quite often when I lived at home. I have phases in which I am into healthy food, and I sometimes have phases in which I just neglect the healthy lifestyle and give in to me unhealthy cravings, but my dad is very stable in his lifestyle; it needs to have no white sugar, preferably no butter, everything needs to be whole grain, etc. He loved these cookies, because not only are they very good for you; they also taste incredibly delicious!


What do you need?
  • For the cookies:
  • Oats – 1 cup
  • Flour, whole wheat – 1/2 cup
  • Sugar, brown – 2 tbsp
  • Baking powder – 1/4 tsp
  • Salt – 1 pinch
  • Water – 2 tbsp
  • Olive oil – 1/4 cup + 2 tbsp
To top the cookies with (optional):
  • Blue cheese
  • Raspberry jam, preferably not too sweet

How to make it?
  1. Preheat the oven to 350 degrees F or 175 degrees C.
  2. Mix the dry ingredients: oats, flour, sugar, baking powder, and salt.
  3. Add the water and olive oil, and combine until it has formed into a sticky dough. Just use a wooden spoon for this, as it combines very easily.
  4. Take your baking tray(s) and form cookies. Just take a tablespoon of dough, roll it in your hand, and flatten with the palms of your hands. They do not need to be shaped perfectly, because they should look rustic.
  5. Bake for approximately 22-25 minutes, until they are nice and golden brown.
  6. Cool down before you top them with the cheese and jam. Of course you could also just eat them as they are, because they taste perfectly fine that way as well!
These are perfect for an afternoon get-together. Serve with a nice fruity wine, and you are good to go! The first time I made oatmeal cookies I used a cook book which said they are especially good in fall. Who are they kidding? These are perfect all year long! Enjoy!
