Recipe 41: Chocolate-Chip Banana Bread

Finals are over! I handed in my last couple of papers last Friday, partied it out, and slept for days. But here I am! Ready to do some baking! I was about to make a banana fruit salad this morning when I saw that my bananas were a bit too ripe to still eat as they are. Therefore, I came up with the fabulous idea to make some gorgeous banana goodness from the oven.
What do you need?
  • Flax seed, ground - 1 tbsp
  • Bananas, very ripe - 3 pieces
  • Cinnamon, ground - 1 tsp
  • Sugar, white - 2/3 cup
  • Oil, vegetable or another neutral one - 1/3 cup
  • Flour, unbleached all-purpose - 1 1/2 cup
  • Baking powder - 2 tsp
  • Baking soda - 1/4 tsp
  • Salt - 1/4 tsp
  • Chocolate chips or sprinkles - 1/4 cup
  • Powdered sugar
How to make it?
  • Pre-heat an oven to 400 degrees F or 200 degrees C.
  • In a little cup, mix 1 tbsp ground flax seeds with 1.5 tbsp of water. Set aside for 5 minutes while you are working on the next step.
  • With a mixer, blend bananas until completely smooth. Then, add the cinnamon, sugar, oil, and flax seed mixture. Mix together.
  • Sift the flour, baking powder and soda, and salt over, and mix until just combined. After it is combined, stir the chocolate sprinkles through.
  • Grease a cake tin (or several smaller ones like I have done) and divide the batter evenly.
  • If you are making smaller cakes, bake for 30 minutes. If you are making a bigger cake, it might take longer - say 35-40 minutes. Check if it is done by inserting a toothpick into the center. If it comes out clean, you know the cake is done!
  • Let the cakes cool down for about 20 minutes, and when it is cooled down completely, make a glace by adding 1 tsp of water to 1/2 cup of powdered sugar. Cover the top of the cake with this.
Enjoy this lovely little treat! It is super good to eat warm, but it needs to cool down for 20-ish minutes to get the cake firm enough to eat. This is, by the way, probably even better on a cold fall or winter day - but definitely not exclusive for the colder seasons. Definitely not.
