Recipe 40: Quick Chili with Spinach

I hate finals! Just throwing that out there. I hate the stress, the workload, and the unhappy feelings it brings with it. I love food, but I usually start giving in to unhealthy things to eat when stress kicks in. I feel like I have no time to cook proper food. If you are like me in stressful situations: here a solution! Well, it is only one recipe, but it is a very tasty meal that will satisfy your desire for a good warm meal.
What do you need?

  • Olive oil - 2 tsp
  • Onion - 1 piece
  • Garlic - 1 clove
  • Water - 3 tbsp
  • Vegetable stock, cube (non-liquid) - 1/2 piece
  • Tomato puree - 4 tbsp
  • Cheyenne pepper - 1/4 - 1/2 tsp
  • Chili beans in sauce, vegan - 1 medium-sized can
  • Corn, canned (optional) - 4 tbsp
  • Spinach, washed - 4 big handfuls
This recipe serves two. If you are alone, that is even better: you can eat from it twice! When buying the chili beans in sauce, make sure you buy one that is vegan, and contains very little sugar and sodium. Make sure it is one that is as pure as possible, but you do need the spices that are in it. If it has no salt at all, you might want to add some salt to your likening.
How to make it?
  1. Slice up onion and garlic, and bake in the olive oil until nearly soft - approximately 2 minutes. In the meanwhile, break up the half stock cube.
  2. Add the bit of water and the stock powder. Stir through, and add tomato puree and Cheyenne pepper. Cook for about 2 minutes.
  3. Add the can of chili beans, and cook for another 4 minutes. Stir a few times.
  4. Lastly, add the corn and spinach, and stir through until the spinach is soft. This should take another minute, but might take two. And you are done! That is how easy it is!

Enjoy this quick meal on a busy day, or just whenever you feel like it - 'cause it is just that good. Have a great week!
