Recipe 31: Coconut and Orange Oatmeal

A couple of days ago, I received a request for 'more regular recipes, one we can make on-the-go, or within five minutes in the morning'. Of course that's possible! I will just share my every-day recipes as well as the more special ones.

This morning the sun shone through my window, which made me a very happy human being. I am loving this month, seriously! I keep buying these flowers and lots of fruits, which make my room very pretty, and when I come in it smells like tulips and oranges. I could not help but using this amazing smell in a recipe today, so I present to you: oatmeal with orange and coconut! For those interested: it contains 333 calories.
What do you need?

  • Water - 1 cup
  • Rolled oats, regular or gluten-free - 1/2 cup
  • Orange - 1 piece
  • Coconut milk or creme - 1 tbsp
  • Agave syrup - 1 tbsp
  • Flax seed, ground - 1 tsp

How to make it?
  1. Cook the oatmeal with water. You can use a non-dairy milk, but it does become a very creamy oatmeal even without the milk. Make sure you keep stirring while it is being cooked.
  2. In the meanwhile, peel an orange, and divide into two halves. Cut the slices of one orange into small parts, and keep the slices of the other half in tact.
  3. Once the oatmeal is finished, stir the small pieces of orange through, and put it into a bowl. Top with coconut creme and agave syrup. Spread the whole orange slices over the top, and sprinkle with a teaspoon of ground flax seed.
This oatmeal is very healthy, and will give you a great energy boost to start off your day! It will probably keep you full until lunch, depending on the time you eat breakfast and your digestive system. Of course you can also eat it for lunch or dinner!
