Recipe 19: Creamy Winter Oatmeal with Summer Fruit

Sugar free and vegan oatmeal that is super creamy and fruity on a cold winter day: it really is possible. I would say this is made with ingredients you probably have on hand already, but then I realized that is probably just me. This oatmeal does not take long to make (it is fast cooking oatmeal), but it tastes like a warm cup of heaven on a dark January morning.
What do you need?
  • Rolled oats, gluten free - 1/3 cup
  • Coconut milk - 1/3 cup
  • Water - 1/3 cup
  • 'Summer fruit' (strawberry, cherry, blueberry, raspberry, etc. - you can find this at the freezer section at your supermarket), defrosted - 1 cup
  • Agave or maple syrup - 1 tbsp + more to pour over at the end
  • Vanilla extract - 1/2 tsp
  • Almonds, roasted - 1 small handful 
 How to make it?
  1. Put two pans on medium heat: one with the water, coconut milk, and oatmeal - the other with the fruit, agave syrup, and vanilla extract. Make sure you keep stirring both often.
  2. Cook both mixtures for 7-10 minutes. Remember that coconut milk burns very quickly, so especially the oatmeal needs continuous stirring.
  3. Once the oatmeal is thick, and the fruit is fully cooked through, put the liquid of the fruit mixture into the oatmeal by using a sift.
  4. Now serve the oatmeal in a bowl, and top it with the fruit from the sift, the roasted almonds, and extra agave syrup to sweeten it.
