Recipe 17: Warm Spinach Salad with Feta Cheese and Eggs.

You might be surprised to read the words 'feta cheese and eggs' on this blog after my announcement to try out solely vegan food for one week. I tried, and I am not going to stick with it (which, for the record, does not mean I will not be sharing vegan recipes anymore). I had no energy during the day, even though I ate many nuts and other nutritious foodies. I am going to stay with vegetarian for now.

After a 2 AM Skype session with a friend in Canada last night, I woke up quite late this morning, so I had a late breakfast as well as a late lunch, at about 3 PM. I decided to go with a very fulfilling warm gluten-free salad. The flavor combination is great, and it will keep you full for a couple of hours! 
What do you need?
  • Eggs - 2 large
  • Olive oil
  • Salt, oregano, and cayenne pepper
  • Tomato - 3 small ones, or 2 big ones
  • French Spinach - 2 cups
  • Avocado - one half
  • Feta Cheese
  • Hummus
How to make it?

  1. Mix up the eggs, but not too well. Little pieces of yellow and white make the omelette look less produced. I love home made food, so I prefer food to look home made too. If the color of the omelette is too even, it might look produced and fake. Whisk it up, and add some salt, cayenne pepper, and oregano. In the meanwhile, heat up a steel pan on medium heat with some olive oil in it.
  2. Slowly pour the egg-mixture into the pan once it is hot, and bake for about 3 minutes on one side. When that is done, flip it, and try to cut it into pieces with a plastic (!) spatula. You can use a steel spatula if you happen to have a pan that will not be ruined by that.
  3. Once you cut it up, add 2 cut up tomatoes, and add to the egg. Once that is cooked, change the heat to low, and add the spinach. In the meanwhile, cut up half an avocado into little cubes. Also keep stirring the spinach, and make sure you do not overcook it. It should only be on the heat for a little over one minute.
  4. Put the spinach-egg stir on a plate, and serve with cubes of avocado and feta cheese on top, and add a sliced tomato on the side, with a bit of hummus. 
Enjoy this lovely lunch or breakfast! Just the spinach-egg stir would make a great part of dinner too.
